Baby Corn Curry

 

Ingredients:

Baby Corn – 1 can/1 bunch/2cups
Tomato – 1 chopped
Onion – Half onion – chopped
Green chillies – 3 slit lengthwise
Cinnamon sticks – 2 medium
Cloves – 3
Turmeric powder – 2 pinches
Coriander/Dhaniya powder – 0.25 tsp
Salt and Chilly powder – to taste
Cilantro/Coriander – to garnish

Method:

Cut Baby Corn into 1 inch long pieces. Wask and Keep aside.

Heat a skillet. Add 3 tbs oil. Add chopped onions and saute well until they begin to change color.

Add cloves, cinnamon sticks, green chillies and a pinch of turmeric powder.

Add chopped tomatoes.Cover and cook on medium until tomatoes turn tender and can be mashed (approx 3 mins)

Remove lid. Add Baby corn. Adjust salt and chilly powder. Add coriander powder. Mix well. Cover and continue cooking for another 3-4 minutes.

Remove lid and cook for an additional minute.

Garnish with Cilantro

You may squeeze juice of lime before serving.

Serve Hot with Roti/Chapathi.
