Pumpkin Oats

1/4 cup oatmeal

3/4 cup pumpkin puree (pressure cook pumpkin and puree)

1 tsp grated ginger

1/4 tsp cinnamon pwd

small pinch clove pwd

small pinch cardamom pwd

1 1/2 tbsps grated jaggery or brown sugar

salt to taste

3 cups water


Bring water to a boil, add salt and oats and cook till the oats are three-fourth done. Add grated ginger, pumpkin puree, grated jaggery, cinnamon pwd, clove pwd, cardamom pwd and cook for another 3 mts.

 Turn off heat and let it come to room temperature. Serve warm. Top with nuts of your choice.
